Yes, it is. You read that right. I said crumble + onions. What else should I add? No, I think that’s enough. The idea to make an onion crumble (I said onion crumble again…) was going through my head for a longtime. I even bought the baking glass dish to do it as soon as the idea came to my mind… I am like that, even if sometimes I hesitate a little, sooner or later, I move into action. The result was exactly as I expected, maybe even better. This onion crumble represents a dish that deserves to be eaten little by little, by small bits I would suggest. The intensity of onions’ taste meeting the sweetness of the crumbled dough is absolutely amazing and mouthwatering.This recipe is easy and fast enough to do, I hope you will trust me.
Ingredients:
500 gr. finely chopped onions • 50 gr. butter for cooking + 40 gr. for the dough • 1 tablespoon of balsamic vinegar • 1 tablespoon of brown sugar • 40 gr. of flour • 10 gr. of almond flour / powder • 1 good tablespoon of grated Parmesan • thyme • salt and pepper
Preheat oven to 200 °;
In a pan melt the butter just a bit over a low heat, then add the onions and increase the heat;
After a few minutes, add salt, pepper and a few sprigs of thyme, sugar and balsamic vinegar, cook until onions are almost defeated;
Meanwhile prepare the dough for the crumble by mixing the flour, the partially melted butter, the grated Parmesan cheese, the almond flour and a pinch of salt, with hands, to obtain a granular mixture, set aside;
Once the onions are ready and less warm, place them in the baking dish, cover with the crumble ‘dough;
Bake about 15 minutes or until the top of the pie is golden brown.

Crumble d’oignons
Oui, c’est ça. Vous avez bien entendu. J’ai dit : crumble + oignons. Que puis-je ajouter ? Rien, à mon avis c’est suffisant. Ça fait longtemps que l’envie de faire un crumble d’oignons (je le répète encore) me passait par la tête. J’ai même acheté le plat de verre pour cela dès que l’idée m’est venue à l’esprit … je suis ainsi, même si parfois j’hésite un peu, tôt ou tard, je passe à l’action. Le résultat fut exactement comme je l’attendais, peut-être mieux. Il se laisse goûter lentement, par petits morceaux on dirait, avec l’intensité du goût des oignons et la douceur de la croute ; tout est étonnant! Voilà la recette, facile et assez rapide, en espérant que vous me ferez confiance.
Ingrédients:
500 gr. d’oignons finement hachés • 50 gr. de beurre pour la cuisson + 40 gr. pour la croute • 1 cuillère à table de vinaigre balsamique • 1 cuillère à table de cassonade • 40 gr. de farine • 10 gr. de farine/poudre d’amandes • 1 bonne cuillère à table de parmesan râpé • thym • sel et poivre
Préchauffez le four à 200 °;
Faites fondre le beurre dans une poêle à feu doux, puis ajoutez les oignons et augmentez le feu;
Après quelques minutes, ajoutez le sel, le poivre et quelques branches de thym, laissez cuire jusqu’à ce que les oignons soient presque défaits;
Pendant ce temps, préparez la pâte pour le crumble en mélangeant avec les mains la farine, le beurre partiellement fondu, le parmesan râpé, la farine d’amandes et une pincée de sel, afin d’obtenir un mélange granuleux, réservez ;
Dès que les oignons sont prêts et moins chauds, déposez-les dans un plat à rôti, recouvrez de la pâte à crumble précédemment préparée ;
Cuisez au four environ 15 minutes ou jusqu’à ce que le dessus de la tarte soit doré.

Crumble di cipolle
Ingredienti:
500 gr. di cipolle finemente tritate • 50 gr. di burro per la cottura + 40 gr. per la crosta • 1 cucchiaio di aceto balsamico • 1 cucchiaio di zucchero di canna • 40 gr. di farina • 10 gr. di farina di mandorle/ mandorle in polvere • 1 cucchiaio abbondante di parmigiano grattugiato • timo • sale e pepe
Preriscaldate il forno a 200 °;
Sciogliete il burro in una padella a fuoco basso, aggiungere poi le cipolle e alzate la fiamma;
Dopo qualche minuto, aggiungete sale, pepe e qualche rametto di timo, cuocete fino a quando le cipolle saranno morbide, quasi disfatte;
Nel frattempo, preparate la pasta per il crumble mescolando con le mani la farina, il burro parzialmente fuso , il parmigiano grattugiato , la farina di mandorle e un pizzico di sale in modo da ottenere una miscela granulare, tenete da parte;
Una volta che le cipolle sono pronte e meno calde, mettetele in patto/ teglia da forno, coprite con l’impasto da crumble che avete preparato e messo da parte;
Cuocete circa 15 minuti o fino la supercifice sará bella dorata.

Un crumble salato non l’avevo mai visto, ma trattandosi di cipolle penso che il loro sapore si sposi perfettamente alla base, quindi penso che potrei provarci! Tanto più che le cipolle sono sempre a buon prezzo (e vista la pessima aria che tira nel nostro paese non è una valutazione del tutto superflua…)!

Ho dovuto negarmi il piacere della cipolla per molto tempo: mio padre non poteva nemmeno sentirla in un soffritto che sbraitava e gridava cose senza senso…ora che posso riappropriarmi dei miei spazi farò mia questa tua idea.
Immagino già il contrasto tra dolcezza e gusto deciso…poi per vedere l’effetto che fa, ne metterò una piccola teglia davanti alla porta dei mie 😀
Se può servire come incentivo questo crumble eé stato mangiato a 3 riprese dalla mia amica Iris, notoriamente nemica delle cipolle… certo non ha mai sbraitato, ma ha sempre dichiarato con orgoglio la sua avversione per le cipolle! chissà, magari la dolcezza della pasta ( con la farina di mandole poi) potrs avere effetti benefici anche su tuo padre???
