Time flies so fast that I did not realize that Easter is already here, and I’m not ready at all. I have to admit that I’m not too inspired, I don’t have any super original ideas. What I’d like the most for this Easter, counting on warm weather, is walking outside in the lovely parks of Montreal and stopping for a few seconds to think and organize the next few weeks, since some friends from Italy will be here. We have some invitations for Easter dinner and for the day after, so I have to prepare something to bring. Completely soaked in my non-Ester mood, I’ve changed my mind several times, but finally I’ve opted for this cute and very easy recipe. Let’s try to have more fun and bring some “sun” on my non-Ester mood, joining the #12 Fiesta Friday, I hope that Angie, Nancy and Ngan will appreciate it!
Ingredients for 4 servings:
Few sheets of phyllo dough • 1 bunch of asparagus • 30/40 gr. of finely chopped onion • 2 tablespoons of ricotta • 1 egg • 2/3 tablespoons olive oil • salt and pepper • softened butter for brushing • dry ricotta and few cherry tomatoes for garnish
- Remove the hardest part of the asparagus, cut them into pieces;
- Heat the oil in a pan, add the onion and let it sauté over a high heat ;
- Add asparagus, salt and pepper, then reduce the heat and cook until they are tender;
- Turn off the heat and let the asparagus cool down;
- Meanwhile, preheat the oven to 180°, grease the molds with butter, reserve;
- Cut the dough sheet into squares, brush each square with the softened butter and “stick” 4-5 layers of dough, one above the other;
- Put each piece of dough into each mold in order to form a cup, set aside;
- Using a blender, reduce the asparagus in cream, add the ricotta, the egg and mix well;
- Pour a few tablespoons of asparagus cream in each mold, garnish with a cherry tomato and bake for about 15 minutes;
- Remove from the oven, wait a few minutes, garnish with dry ricotta and serve.
Nids de pâte phyllo avec crème d’asperges et ricotta
Le temps passe vite, si vite que je n’ai pas réalisé que Pâques est déjà là, et moi je n’étais pas du tout prête. Je vous avoue ne pas être trop inspirée, je n’ai aucune idée originale. Ce que je désire le plus, en espérant le retour du beau temps, est me promener dehors dans un des charmants parcs de Montréal et m’arrêter quelques secondes pour réfléchir, et organiser les prochaines semaines, car des amis d’Italie vont venir. Nous avons de toute façon des invitations chez des amis, il faut préparer quelque chose à leur apporter. J’ai changé d’idées plusieurs fois, finalement m’est venue à l’esprit une recette sympathique et très facile à réaliser.
Ingrédients:
Quelques feuilles de pâte phyllo • 1 botte d’asperges • 30/40 gr. d’oignon finement haché • 2 cuillères à table de ricotta • 1 œuf • sel et poivre •2/3 cuillères à table huile d’olive• beurre ramolli pour badigeonner • quelques tomates cerises • ricotta sèche pour la garniture
- Enlevez la partie la plus dure des asperges, coupez-les en morceau ;
- Faites chauffer l’huile dans une poêle, ajoutez l’oignon et faites-le sauter à feu vif ;
- Ajoutez les asperges, salez et poivrez, puis baissez le feu et cuisez jusqu’à ce qu’ils soient tendres;
- Éteignez le feu et laissez refroidir les asperges;
- En attendant, préchauffez le four à 180°, graissez des moules avec du beurre, réservez;
- Coupez les feuilles de pâte en carrés, badigeonnez chaque carré de pâte avec le beurre ramolli et « collez » au moins 4 carrés de pâte, l’un au-dessus de l’autre;
- Mettez chaque morceau de pâte dans chaque moule, réserve;
- À l’aide d’un mixeur, réduisez les asperges en crème, ajoutez-y la ricotta, l’œuf et mélangez bien ;
- Versez quelques cuillères de crème d’asperges dans chaque moule, garnissez avec une tomate cerise et enfournez pendant 15 minutes;
- Sortez du four, attendez quelques minutes, garnissez avec la ricotta sèche et servez.
Cestini di pasta fillo con crema di asparagi e ricotta
Ingredienti:
Qualche foglio di pasta fillo • 1 mazzo di asparagi • 30/40 gr. di cipolla tritata finemente • 2 cucchiai di ricotta • 1 uovo • sale e pepe • 2/3 cucchiai di olio d’oliva • burro ammorbidito per spennellare • qualche pomodorino ciliegia • ricotta salata per guarnire
- Togliete la parte più dura degli asparagi, tagliateli a pezzetti;
- Scaldate l’olio in una padella, aggiungete la cipolla e fatela saltare a fuoco vivo;
- Aggiungete gli asparagi, sale e pepe, poi abbassate la fiamma e fate cuocere fino a quando saranno teneri;
- Spegnete il fuoco e lasciate intiepidire gli asparagi;
- Nel frattempo, preriscaldare il forno a 180 °, ungete gli stampini con del burro e tenete da parte;
- Tagliate la sfoglia in quadrati, spennellate ogni quadrato con il burro ammorbidito e sovrapponete almeno 4-5 pezzi di pasta uno sopra l’altro;
- Sistemate i “quadrati” di pasta negli stampi e tenete da parte;
- Utilizzando un frullatore, riducete gli asparagi in crema, aggiungete la ricotta, l’uovo e mescolare bene;
- Versare qualche cucchiaio di crema di asparagi in ogni stampo e guarnite con un pomodorino e cuocete per 15 minuti circa;
- Togliete dal forno e attendente qualche minuto, guarnite con ricotta salata e servire.Photos by Ali and Margherita

Fisso questi cestini perfetti e mi interrogo su come ci sia riuscita… 😀 Perchè una volta ho provato a diventare creativa con la pasta fillo ma sono venuti dei fagottini un po storti e zoppicanti… mi piace molto, solo che è così sottile e fragile! Forse devo fare più strati, come scrivi nel procedimento… ci DEVO riprovare, mi sono innamorata della ricetta!

Yes, we can say it. There’s just one egg, ricotta and asparagus. And since the asparagus cream is inside the dough nest maybe we could even try to do them without that egg… I choose asparagus, but I think they can be great ever with other kinds of vegetables! Qui piove e per la prima volta siamo dovuti rimanere a casa: la nostra Pasqua è sempre in Toscana, ma quest’anno a mio marito hanno bloccato le ferie, quindi sto utilizzando le mie per risistemare casa, cosa che comunque mi fa piacere! Però sono talmente presa che non ho cucinato nulla, ma proprio nulla di che…quindi mi godo questi nidi così bellini e, sono certa, buonissimi perchè dove c’è la ricotta a me piace tutto!
