You can trust eggplants. They never deceive you. Yes, I know, sometimes they can be bitter, but something unexpected can always happen, can’t it? These eggplant and feta balls are the last things I cooked before I left for my holidays in Italy, with the idea to empty my fridge as much as possible. There were some fresh mint, a couple of eggs and a lot of feta that should be eliminated to avoid the risk of turning my fridge to a chemical laboratory. I’ve added some cumin and everything came out perfectly fragrant and tasty. I’ll bring these eggplant and feta balls over to Fiesta Friday #20, that is getting hard and harder, and where Angie, Fae and Suzanne will need a lot energies checking all the recipes out.
Ingredients:
500 gr. of eggplant • breadcrumbs • 1 egg • 3-4 tablespoons of crumbled feta • 6-7 mint leaves, finely chopped • 1 teaspoon of cumin seeds lightly crushed • salt and pepper • corn flour • oil for deep-frying
- Wash and peel the eggplants;
- Cut into chunks and put them in a saucepan with water, cook over medium heat until the eggplants are tender;
- Rinse the eggplant and press them by putting a flat top with weights to completely remove all the water;
- Using a blender squash them, add the egg, feta, mint, cumin, salt and pepper;
- Shaping with the hands form the balls, toss in the corn flour;
- Put enough vegetable oil in a pan, when it’s hot, deep-fry the eggplants and feta balls about 2 minutes on each side;
- Remove them from the heat, wipe with kitchen paper and serve immediately.
I served my meatballs with tzatziki sauce with homemade Greek yogurt, garlic, cucumber, salt and pepper.
Boulettes d’aubergines et Feta
Aux aubergines, vous pouvez faire confiance. Elles ne vous trompent jamais.
Oui, je sais, parfois elles peuvent être amères, mais un imprévu peut toujours arriver, n’est-ce pas ? Cette recette est la dernière chose que j’ai cuisinée avant mon départ pour mes vacances en Italie, dans l’idée de vider le plus possible mon réfrigérateur. Il y avait de la menthe fraiche, des œufs et beaucoup de feta qu’il fallait éliminer pour éviter le risque de transformer mon frigo en laboratoire chimique. J’ai ajouté du cumin et tout était parfait, parfumé et surtout savoureux.
Ingrédients:
500 gr. d’aubergines • 1 œuf • chapelure • 3-4 cuillères de feta émiettée • 6-7 feuilles de menthe finement hachées • 1 cuillère à thé de graines de cumin légèrement concassées • sel et poivre • farine de maïs • huile pour frire
- Lavez et pelez la peau des aubergines;
- Coupez-les en gros morceaux et mettez-les dans une casserole avec de l’eau, laissez cuire à feu moyen jusqu’à ce que les aubergines deviennent tendres;
- Rincez les aubergines et pressez-les en mettant un plat dessus avec du poids pour retirer complètement toute l’eau;
- À l’aide d’un mixeur, réduisez-les en purée, ajoutez l’œuf entier, la chapelure, la menthe, le cumin, la feta, salez et poivrez au goût;
- Formez des boules avec le mélange, passez-les dans la chapelure/farine de maïs ;
- Faites réchauffer de l’huile pour frire dans une poêle, dès qu’elle est chaude, cuisez les boulettes environ 2 minutes de chaque côté;
- Retirez-les du feu, essuyez-les avec du papier et servez tout de suite.
J’ai servi mes boulettes avec une sauce tzatziki maison faite avec du yaourt grec, de l’ail, du concombre, sel et poivre.
Polpette di melanzana con la feta
Ingredienti:
500 gr. di melanzane • 1 uovo • pangrattato • 3-4 cucchiai di feta sbriciolata • 6-7 foglie di menta finemente tritata • 1 cucchiaino di semi di cumino leggermente schiacciati • sale e pepe • farina di mais • olio per friggere
- Lavate e sbucciate le melanzane;
- Tagliatele a pezzetti e mettetele in una pentola con dell’acqua, fatele cuocere a fuoco medio fino a quando le melanzane saranno tenere;
- Sciacquate le melanzane e strizzatele bene mettendole in uno scolapasta con peso in modo da rimuovere completamente tutta l’acqua in eccesso;
- Riducetele in crema con un frullatore oppure con una forchetta, aggiungete l’uovo il pangrattato q.b, la menta, il cumino, la feta, sale e pepe ;
- Formate le polpettine con l’impasto, rigiratele nella farina di mais (o se preferite della farina normale);
- Riscaldate l’olio per friggere in una padella, non appena sarà caldo, cuocete le vostre polpette per circa 2 minuti su ogni lato;
- Toglietele dal fuoco asciugatele con dello scottex e servite immediatamente.
Io ho servito le mie polpette con una salsa tzatziki fatta con yogurt greco, aglio, cetriolo, sale e pepe.

J’adore les aubergines et j’en fais très souvent des plats géorgiens et orientaux ou de la pasta alla norma, mais j’ai rarement le réflexe de penser à toutes les autres possibilités, comme de faire des boulettes par exemple ! Avec la feta j’imagine que ça doit être vraiment bon !
La pasta alla norma est parmi les sauces que je préfère. Toute les fois que j’ai eu l’occasion d’aller en Sicily j’en mangé beaucoup! Il faut que tu essaye les aubergines en plusieurs recettes, le résultat est garantie! Si tu veux dans mon blog tu peux trouver aussi une soupe d’aubergines et yaourt, très très bon! Margherita, My hubby and I are with you. Eggplant is just amazing and a true comfort food. Last week, we made roasted eggplant “caprese” and tonight we are enjoying it in a quinoa gratin. You spoke of bitter eggplant. I don’t think any eggplant could ever taste bitter after a good cook and purée with amazing spices, as you direct hear. These are a dish we will enjoy all summer as our garden comes to fruition (or vegition!). I roasted the eggplant in EVOO/salt/pepper, and then layered them with sliced oranges, heirloom tomatoes, basil and farmer’s goat cheese (soft, like fresh mozzarella) in a stack. Drizzled with EVOO and a great balsamic and extra salt and pepper. 🙂 I often share on FaceBook – I am Shanna Koenigsdorf Ward if you want to look me up. 🙂 Can’t wait to try your eggplant balls; I love an amazing, French sheep’s feta.
