Do you really need to hear something about this recipe? I remind you that this is bread pudding with salted caramel, and that the bread is a pain brioche. My words are superfluous, I guess, so let me just say, “Try it!”. I can guarantee you that, when the bread meets the flavor of the salted caramel, all your concerns, or eventually, your bad mood, will be an old memory, at least for a few minutes.
Ingredients:
15 slices of pain briosche (from the day before or two days old)* • 400 ml. of whipping cream (liquid) • 3 eggs • 2 teaspoons of ground cinnamon • 2 teaspoons of brown sugar. For salted caramel: 5 tablespoons of brown sugar • 5 tablespoons of butter • 3 tablespoons of whipping cream (liquid) • 1 pinch of fleur de sel.
- Cut the bread into triangles, trimming the edges;
- Preheat oven to 180°, grease a baking dish with butter, set aside;
- Put a first layer of bread in the dish, sprinkle with cinnamon;
- With a whisk mix eggs, sugar and cream, set aside;
- Put left slices vertically, pour the egg mixture into the dish, wait a few minutes and press down the bread slices;
- Prepare the salted caramel sauce, by putting all the ingredients in a pot over a medium heat, stirring until the salt caramel becomes slightly thick and light brown;
- Pour the salted caramel over the bread, and bake for 25 minutes;
- Serve the bread pudding warm, adding a scoop of vanilla ice-cream if you like it.
- The choice of the bread it’s totally up to you. I made mine, using the amazing recipe.

Pain perdu avec caramel salé
Avez-vous vraiment besoin que je vous raconte quelque chose au sujet de cette recette ? Je vous rappelle qu’il s’agit de pain brioché avec du caramel salé. Mes mots seraient superflus, alors permettez-moi seulement de vous dire : « essayez-le ! ». Au moment où le pain brioché rencontrera la saveur du caramel salé, toutes vos préoccupations et votre mauvaise humeur ne seront plus qu’un souvenir.
Ingrédients:
15 tranches de pain brioché (de la veille ou d’il y a 2 jours) * • 400 ml. de crème à fouetter • 3 œufs • 2 cuillères à thé de cannelle en poudre • 2 cuillères à thé de sucre de canne. Pour le caramel salé : 5 cuillères à table de cassonade • 5 cuillères à table de beurre • 3 cuillères à table de crème • 1 bonne pincée de fleur de sel
- Coupez le pain en triangle, en enlevant les croutes;
- Préchauffez le four à 180°, graissez un plat à four avec du beurre, réservez;
- Mettez une première couche de pain au fond du plat, saupoudrez de cannelle;
- Avec un fouet, mélangez les œufs, le sucre et la crème, réservez;
- Mettez les tranches qui restent verticales, versez le mélange dans le plat, attendez quelques minutes;
- Préparez le glaçage de caramel salé en mettant tous les ingrédients dans un chaudron et laissez bouillir en remuant jusqu’à ce que le caramel salé devienne épais et légèrement foncé;
- Versez le caramel salé au-dessus et cuisez au four 25 minutes:
- Servez le pain perdu tied, si vous voulez avec de la crème glacé à la vanille.
- La choix du pain c’est à vous, vous pouvez l’acheter ou le faire vous-même. Moi je l’ai réalisé avec cette recette.
Budino di pane al caramello salato
Ingredienti:
15 fette di pane brioche (di qualche giorno o del giorno prima)* • 400 ml. di panna da montare • 3 uova • 2 cucchiaini di cannella in polvere • 2 cucchiai di zucchero di canna . Per il caramello salato: 5 cucchiai di zucchero di canna • 5 cucchiai di burro • 3 cucchiai di panna • 1 pizzico di fleur de sel
- Tagliate le fette del pane in due in modo da avere 2 triangoli, togliete le croste;
- Preriscaldate il forno a 180°, ungete una teglia con il burro, tenete da parte;
- Sistemate uno strato di pane nella teglia cospargetelo con la cannella;
- Utilizzando una frusta, mescolate le uova, lo zucchero e la panna, tenete da parte;
- Mettete le fette che rimangono per verticale, versate il composto di panne nella teglia, attendete qualche minuto;
- Per preparare caramello salato, mettete tutti gli ingredienti in una padella e fateli sciogliere e amalgamare mescolando;
- Fate cuocere fino a quando il caramello salato sarà « cremoso » e leggermente « dorato »;
- Versate il caramello salato sopra il pane, mettete in forno e cuocete per circa 25 minuti;
- Servire tiepido, se volete potrete accompagnarlo con una pallina di gelato alla vaniglia.
Per quanto riguarda il pane potrete decidere se comprarlo o farlo in casa. Io l’ho fatto seguendo questa ricetta.

Che spettacolo!!! Mi piace da matti… a dire il vero il caramello salato non l’ho mai fatto, ma mi è sempre stato prospettato come una gran golosità e ora mi hai incuriosita ancora di più: in questo periodo non ho mezza giornata libera per cuocere qualcosa che esca dai consueti pasti quotidiani, ma questo pudding va fatto, assolutamente!

Questa ricetta sembra una deliziosa terapia! Il caramello salato…ahhhhhh, che meravigliosa combinazione di sapori! Le foto profumano di pomeriggio invernale, di piacevole pausa durante l’allestimento dell’albero di Natale, con la manica che copre il polso e quel meraviglioso cucchiaio d’altri tempi!
Mamma mia che voglia id provarlo immmediatamente, di uscire da lavoro e andare a fare subitissimo la spesa!

Allora Marghe, io non vorrei ripetermi ma… vuoi mettere la poesia decadente del pain perdu con quella del budino di pane? Anche stavolta Francia 1 e Italia 0! 😀 Tra l’altro tu non lo sai che “corteggio” da tempo il pain perdu, attratta da sempre da questo nome malinconico come piace a me… sento che una ricetta apparirà presto, ne sfogliavo una su un bel libro qualche giorno fa e ora ti ci metti anche tu a tentarmi… 🙂
