Archived the colours and the lights of Christmas; it takes a lot of strength and happiness to face the worst months of the winter, with its terrible temperatures and its several inches of snow. I’ve tried to find innovative dishes, using for the very first time the amaranth. I heard a lot of good things about its wonderful properties! According to what I learned during my little search, the amaranth is a plant rich in vitamins A and B, folic acid, vitamin C and minerals such as calcium, iron, copper, zinc, magnesium and also phosphorus. Amaranth is deprived of gluten and contains more iron and calcium than durum wheat. Being a little inexperienced, I decided to start making a simple creamy soup with cauliflower. Keep in mind that amaranth can also be used as flour to make bread, cookies ,or any baked goods. Amaranth flour makes the dough moist and sweet, and this is the reason why it’s always important to respect the ration of 1 part of amaranth flour and 6-8 parts of wheat or corn flour.
Ingredients for 3-4 people:
900 gr. of cauliflower cleaned • 250 gr. of amaranth • 50 gr. of onion • 4 tablespoons of olive oil • salt and pepper • pistachios and black sesame seeds for decoration
- Rinse well the amaranth in cold water, reserve;
- Finely chop the onion and cut the cauliflower into florets;
- In a large pot, put the olive oil and add the onion, cook a few seconds, then add the cauliflower;
- Cook for about 5 minutes, stirring often;
- Add water up to the level of the vegetables, salt and reduce the heat. Cook until the vegetables are tender;
- Meanwhile cook the amaranth in a saucepan with cold water (twice the volume of the amaranth) for about 20 minutes;
- When the cauliflower is cooked, drain the water and using a mixer reduce it into cream;
- Rinse the amaranth and add to the cauliflower some cream; add hot water if necessary and cook over a low heat for 5 minutes;
- Season to taste and serve in bowls with pistachios and black sesame seeds.
Crème chou-fleur avec amarante
Archivé définitivement les couleurs et lumières de Noël, il faut beaucoup de force et de bonheur pour affronter l’hiver avec ses terribles températures et plusieurs centimètres de neige. La nouveauté je l’ai cherché dans mon plat, en utilisant pour la première fois l’amarante dont j’avais entendu beaucoup parlé pour ses magnifiques propriétés. En fait, en faisant une recherche, j’ai appris que c’est une plante riche en vitamines A et B, en acide folique, en vitamine C et en minéraux tels le calcium, le fer, le cuivre, le zinc, le magnésium et également le phosphore. L’amarante est prive de gluten et contient beaucoup plus de fer et de calcium que le blé dur. Étant un peu inexpérimentée, pour commencer j’ai décidé de réaliser une soupe simple avec du chou-fleur. Gardez à l’esprit que l’amarante peut être aussi utilisée sous forme de farine pour préparer du pain, des biscuits ou n’importe quel produit cuit au four. La farine d’amarante rend les pâtisseries plus humides et plus sucrée, c’est pour ça qu’il est toujours important de garder la proportion 1 part de farine d’amarante pour 6 à 8 parts de farine de blé ou de maïs.
Ingrédients pour 3-4 personnes:
900 gr. de chou-fleur nettoyé • 250 gr. de amarante • 50 gr. d’oignon • 4 cuillères à table d‘huile d’olive • sel et poivre • pistaches et sésame noir pour la décoration
- Rincez bien l’amarante à l’eau froide, réservez;
- Hachez finement l’oignon et coupez le chou-fleur en fleurettes;
- Dans une casserole assez grande, mettez l’huile d’olive et ajoutez l’oignon, faites cuire quelques seconds, puis ajoutez le chou-fleur;
- Laissez cuire 5 minutes en remuant souvent;
- Ajoutez de l’eau jusqu’au niveau des légumes, salez et baissez le feu. Laissez cuire jusqu’à ce que les légumes soient cuits;
- En attendant cuisez l’amarante dans une casserole avec de l’eau froide (doublez le volume de l’eau) 20 minutes;
- Quand le chou-fleur est cuit, videz l’eau et à l’aide d’un mixer réduisez-le en crème;
- Rincez l’amarante et ajoutez-la à la crème de chou-fleur, ajoutez-y de l’eau chaude si nécessaire et cuisez à feu doux pendant 5 minutes;
- Ajoutez l’assaisonnement et servez dans des bols avec des pistaches et du sésame noir.
Crema di cavolo con amaranto
Ingredienti per 3-4 persone:
900 gr. di cavolfiore pulito • 250 gr. di amaranto • 50 gr. di cipolla • 4 cucchiai d’olio d’oliva • sale e pepe • pistacchi e sesamo nero per la decorazione
- Sciacquate bene l’amaranto in acqua fredda, tenete da parte;
- Tritare finemente la cipolla e tagliare il cavolfiore in cimette;
- In una pentola capiente, mettete l’olio e aggiungeteci la cipolla, fate cuocere pochi secondi, poi aggiungete le cimette di cavolfiore;
- Cuocete 5 minuti, mescolando spesso;
- Aggiungete dell’acqua fino ad arrivare al livello delle verdure, salate e riducete il fuoco. Lasciate cuocere fino a quando le verdure saranno cotte;
- Nel frattempo cuocete l’amaranto in una pentola con un po’ acqua fredda (raddoppiate il volume di acqua) per circa 20 minuti;
- Quando il cavolfiore sarà cotto, eliminate l’acqua e, utilizzando un mixer riducetelo in crema (non troppo spessa);
- Sciacquate l’amaranto e aggiungetelo alla crema di cavolfiore, aggiungete un pochina acqua calda se necessario e fate cuocere a fuoco basso per ancora 5 minuti;
- Aggiustate il condimento e servite nelle ciotoline decorando con pistacchi e sesamo nero.

E questa zuppa, ah questa zuppa! Abbiamo un pacchetto di amaranto nella dispensa da immemore tempo ma non lo abbiamo mai aperto non sapendo bene come usarlo…il cavolfiore qui è la verdura preferita, ne abbiamo qualcosa come tre enormi a casa per la settimana (fino a venerdì) e non ci bastano mai 🙂 in questo periodo potremmo nutrirci di zuppe, quindi sulla lista del ‘to do’ oltre al banana bread si aggiunge questa zuppa meravigliosa!
