The “grandmother’s cake” is a typical cake from Tuscany. A simple cake made with shortbread crust stuffed with pastry cream and pine nuts on top. Found almost everywhere, it’s really hard to go to Tuscany and not taste it. The simplicity of its ingredients and its preparation makes it a versatile dessert that’s generally well appreciated by everyone. In my family this cake is made often for birthdays and any other kind of “home events”. We prepare it so often that we don’t look at the grams anymore, and it’s prepared mostly by heart.
