I love all kinds of cookies, but I admit that I’m not a good baker of them. First because often I don’t guess the right cooking time, and let us speak the truth, making a cake is faster, no need to struggle with the dough that sticks to your hands or with the shape that does not look like you had imagined … But still, the smell of baking cookies in the oven is matchless, isn’t it? Then, during a morning when I was forced staying home, I decided to give up my resistance and give this amazing recipe a try, with a few modifications. Do you like the result? Another week, another Friday another Fiesta Friday’s party! Let’s hang out there!
Ingredients (about 20 cookies):
100 gr. of finely ground hazelnuts • 240 of flour • 150 gr. of butter, softened • 1 egg • 100 gr. of sugar • 2 tablespoons of orange zest • 1 tablespoon of orange juice • 1 pinch of salt• for garnish: 2 oranges (not too large) • 1 egg yolk • white sugar
- Cream the butter with egg, homogeneously;
- Add in all the other ingredients and form a ball of dough;
- Put the ball of dough in plastic foil and leave at least 3 hours in the fridge;
- While waiting, cut oranges in pretty thin slices and place them in the kitchen paper set aside;
- Preheat oven at 180 °;
- Take out the dough and spread it on a floured surface, with a glass or a dough cutter shape the cookies and put them in a roasting pan lined with parchment paper;
- Sprinkle the surface of the cookies with sugar, then brush tem with beaten egg yolk;
- Put each slice of orange on top of each cookie pressing a little bit,bake the cookies for about 15 minutes;
- Take them out and dust with icing sugar;
- If you have any left, keep them in a metal box.
Biscuits sablés aux noisettes et à l’orange
J’aime tous les biscuits, mais j’admets que je n’en suis pas une bonne productrice. Je fais souvent des bêtises à la cuisson, et surtout réaliser un gâteau ça va plus vite, pas besoin de lutter avec le pétrissage qui colle aux mains ou avec la forme qui ne ressemble pas à nos fantasmes… Mais quand même, l’odeur des biscuits qui cuisent au four est sans égal, n’est-ce pas ? Alors, pendant une matinée obligée de rester à la maison, j’ai décidé d’abandonner ma résistance et d’apprivoiser cette recette avec quelques petites modifications. Est-ce que le résultat vous plaît ?
Ingrédients (environ 20 biscuits):
100 gr. de noisettes finement moulues • 240 de farine • 150 gr. de beurre ramolli • 1œuf • 100 gr. de sucre • 2 cuillères à thé de zeste d’orange • 1 cuillère à table de jus d’orange • 1 pincée de sel • pour la garniture : 2 oranges pas trop grandes • 1 jaune d’œuf • sucre blanc • sucre à glace
- Crémez le beurre avec l’œuf d’une façon homogène ;
- Ajoutez-y tous les autres ingrédients et formez une boule de pâte ;
- Rangez la boule de pâte dans un papier en plastique et laissez au moins 3 heures dans le frigo ;
- Pendant l’attente, coupez les oranges en tranches assez minces et rangez-les dans du papier à cuisine, réservez ;
- Préchauffez le four à 180° ;
- Sortez la pâte et étalez-la sur une surface farinée, avec un verre ou un coupe-pâte formez les biscuits et mettez-les dans un plat à rôtir tapissé avec du papier parchemin;
- Saupoudrez les biscuits de sucre, puis frottez avec l’œuf battu;
- Mettez chaque tranche d’orange au-dessus de chaque biscuit et cuisez les biscuits environ 15 minutes;
- Sortez-les et saupoudrez de sucre à glace;
- S’il vous en reste, conservez-les dans une boite en métal.
Biscotti alla nocciola e arancia
Ingredienti (circa 20 biscotti):
100 gr. di nocciole macinate finemente • 240 di farina • 150 gr. di burro ammorbidito • 1 uovo • 100 gr. di zucchero • 2 cucchiai di scorza d’arancia • 1 cucchiaio di succo d’arancia • 1 pizzico di sale • per guarnire : 2 arance non troppo grandi • zucchero • 1 tuorlo d’uovo • zucchero a velo
- Montate a crema il burro morbido con l’uovo;
- Aggiungete tutti gli altri ingredienti, mescolate bene e formate « una palla » di impasto;
- Mettere la pasta nella pellicola trasparente e lasciate in frigorifero almeno 3 ore;
- Durante l’attesa, tagliate le arance a fette sottili poi adagiatele su della carta da cucina;
- Preriscaldate il forno a 180 °;
- Prendete la pasta e stendetela su una superficie leggermente infarinata, con un bicchiere o con un coppa pasta date la forma ai vostri biscotti, metteteli in una teglia foderata con carta da forno;
- Cospargete i biscotti con lo zucchero, poi spennellateli con il tuorlo uovo sbattuto;
- Mettete ogni fetta di arancia sopra ad ogni biscotto, premete leggermente, infornate i biscotti per circa 15 minuti;
- Fateli raffreddare leggermente e spolverateli con lo zucchero a velo ;
- Se avete degli avanzi, conservateli in una scatola di metallo.

Questi biscottoni hanno un aspetto fantastico. Adoro le nocciole negli impasti, biscotti compresi e proprio ora nel forno qualcosina di delizioso sta cuocendo. Poi l’arancia, così, a fette golose. Questi tuoi devo troppo provarli!

Questi biscotti mi sembrano un laghetto di sole… eh sì, la presenza della fettina di arancia mi ha fatto balenare quest’immagine, forse perchè ho voglia di tuffarmi dentro qualcosa di arancione! Le nocciole ci nuotano bene e la parola “sablés” suona come una musica per me… 😀
Io ho pensato ad un bel sole caldo… cmq, ci siamo capite, sole, laghetto… mi sembra che sia chiaro di cosa entrambe abbiamo bisogno!

They weren’t chewy at all, maybe a little the skin, but you can tray to make it tinnier! I hopi you will give these cookies ago… they are really good!

Margherita, ti confesso che anche io ho qualche problema con i biscotti. Basta un attimo perché si brucino, un attimo perché siano ancora crudi! E la pasta che si attacca al piano di lavoro, perché non c’è mai abbastanza farina… Ho anche il fastidioso problema di stancarmene, mangiarli i primi due – tre giorni e poi abbandonarli. Eppure con gli shortbreads non è mai così, ricordo che mamma li preparava spesso per me e papà, perché erano fra i nostri preferiti. Mi sono innamorata dei tuoi con la fettina d’arancia sopra così romantica, mi viene voglia di nuovo di shortbreads…
