I have already said everything about lemon and it might be redundant saying again how deep is my passion for this citrus fruit. The “odd news” here is the “marriage” with the cocoa nibs, in other words the cacao beans that have been roasted, separated from their husks, and broken into smaller pieces. I find that the slightly bitter taste of the cocoa nibs is the “perfect companion” of the unique taste of lemon and of the sweetness of the dough. With the following ingredients I decided to prepare baked donuts, but if you want you can also make muffins or even a cake. It’s Friday, and as you should know, Fridays call for Angie’s Party!
Ingredients (for about 16-18 donuts):
240 gr. of flour • 170 gr. of butter, softened • 2 eggs • the zest and juice of 1 lemon • 1 teaspoon of yeast • 170 gr. of sugar • 2-3 tablespoons of cocoa nibs • 1 pinch of salt
- Preheat oven up to 170 °, butter the donut mold and set aside;
- Sift flour with baking powder and salt, set aside;
- Cream the butter with the sugar until you obtain a white and fluffy cream;
- Add the eggs one at a time, and then add the zest and the juice of the lemon and the cocoa nibs;
- Stir in the flour mixture;
- Pour the mixture with a spoon (or pastry bag to be precise);
- Bake about 15 minutes, let the donuts cool down for a few minutes, unmold and dust with icing sugar.
Beignets au citron et grué de cacao
Sur le citron j’ai déjà tout dit, c’est redondant de souligner encore une fois ma passion pour cet agrume. La vraie nouveauté, c’est le bon « mariage » avec le grué de cacao, c’est-à-dire les éclats des fèves de cacao torréfiés puis concassés. Son goût puissant et légèrement amer a trouvé une belle harmonie avec le parfum du citron et la douceur du pétrissage. Avec les ingrédients suivants, j’ai décidé de réaliser des beignets, mais si vous voulez, vous pouvez aussi préparer des muffins ou peut-être un gâteau unique.
Ingrédients (pour environ 16-18 beignets):
240 gr. de farine • 170 gr. de beurre ramolli • 2 œufs • le zeste et le jus d’un citron • 1 cuillère à thé de levure • 170 gr. de sucre • 2-3 cuillères à table de grué de cacao • 1 pincée de sel
- Préchauffez le four à 170°, beurrez le moule pour les beignets et réservez;
- Tamisez la farine avec la levure et le sel, réservez;
- Crémez le beurre avec le sucre jusqu’à obtenir une crème blanche et mousseuse;
- Ajoutez les œufs un à la fois, puis ajoutez le zeste et le jus du citron et le grué de cacao;
- Incorporez le mélange de farine;
- Versez le mélange avec une cuillère (ou une douille pour être plus précise);
- Cuisez environ 15 minutes, démoulez et saupoudrez de sucre à glace.
Ciambelline al limone con fave di cacao
Ingredienti (per circa 16-18 ciambelle)
240 gr. di farina • 170 gr. di burro morbido • 2 uova • la scorza e il succo di un limone • 1 cucchiaino di lievito per dolci • 170 gr. di zucchero • 2-3 cucchiai di fave di cacao • 1 pizzico di sale
- Preriscaldate il forno a 170 °, imburrate lo stampo da ciambelline e tenete da parte;
- Setacciate la farina con il lievito e il sale, tenete da parte;
- Lavorate il burro a pomata con lo zucchero fino a quando otterrete una crema bianca e « soffice »;
- Aggiungete le uova, una alla volta, poi aggiungete la scorza e il succo del limone, le fave di cacao;
- Aggiungete la miscela di farina e lievito;
- Distribuite il composto con un cucchiaio (o con una sac à poche per essere più precisi);
- Cuocete per circa 15 minuti, lasciate raffreddare e spolverate di zucchero a velo.

Marghe, non so se mi piacciano di più le ciambelline o le foto, sono bellissime. Abbiamo un pacco di fave di cacao nella dispensa di casa che ci ha portato tempo fa la nonna, ma non abbiamo idea di come usarle. Se dici che l’abbinamento con il limone è speciale, ci fidiamo!

Hai fatto bene a dire di usare il sac à poche perchè una volta ho spalmato ovunque l’impasto con il cucchiaino e infatti le ciambelline non sono mai apparse nel blog perchè erano informi e bruttine, ahaha! 😀 Le tue le mangerei adesso dopo pranzo e ne infilerei una in tasca da portare fuori per la merenda mentre vivo questo venerdì assolato e giallo come il limone! 🙂
