My Christmas will be under the sign of spices and ginger, just to make it clear. I have been thinking about Christmas recipes for a longtime, but actually everything I feel like making (and eating) smell like cinnamon, nutmeg and any other spices as long as they are well matched with ginger. The recipe for this upside-down pear and ginger cake was given to me by a very nice Canadian lady. She told me that this is a recipe of her stepmother, who prepared this cake all her life. I have waited several months in order to get the right amount of ingredients, but now, I can tell you that it has been worth the effort. Those who love the flavor of the spices will fall in love at first bite, it’s guaranteed.
Ingredients:
For the sauce: 65 gr. of brown sugar • 65 gr. of butter • 1 tablespoon of maple syrup • 1 tablespoon of finely sliced candied ginger For the cake: 100 gr. of butter • 120 gr. of sugar (brown or regular) • 125 ml. of milk • 170 gr. of flour • 2 eggs • 1 tablespoon of candied ginger thinly sliced • ½ teaspoon of cinnamon • ½ teaspoon of nutmeg • 1 teaspoonful of baking powder•1 pinch of salt • 2/3 pears
- Preheat oven to 180 °, line a mold with parchment paper; set aside;
- First of all, prepare the sauce by putting all the ingredients in a pan and cooking them until you get an
- homogeneous brown sauce (as a caramel sauce);
- Pour the sauce into the mold, making sure to distribute the sauce all over the mold base;
- Peel and core the pears, cut them into slices about 5 mm thick, put them over the sauce
- Prepare the cake by mixing sugar with softened butter with an electric mixer;
- Add the eggs, then the flour and milk, mix well;
- Add spices, candied ginger, baking powder and salt;
- Pour it into the mold and bake the cake for about 40 minutes;
- Flip it and serve warm.

Gâteau renversé aux poires et au gingembre confit
Mon Nöel sera sous le signe des épices et du gingembre. Ça fait longtemps que je pense à des recettes de Nöel, mais toutes les recettes qui m’ont vraiment donnée envie d’essayer sont seulement celles “parfumées” avec de la cannelle, de la muscade et n’importe quelle autre épice ; l’important est qu’il y ait du gingembre. La recette de cette tarte renversée aux poires et gingembre est celle d’une dame canadienne très gentille. Elle m’a dit que c’est une recette de sa belle-mère, qu’elle a préparée très souvent. J’ai attendu plusieurs mois pour avoir sa recette, mais ça valait vraiment la peine. Ceux qui aiment les saveurs épicées tomberont amoureux à la première bouchée, c’est garanti.
Ingrédients:
Pour la sauce: 65 gr. de beurre • 65 gr. de cassonade • 1 cuillère à table de sirop d’érable • 1 cuillère à table de gingembre confit finement tranché Pour le gâteau : 100 gr. de beurre • 120 gr. de sucre (cassonade ou régulier) • 125 ml. de lait • 170 gr. de farine • 2 œufs • 1 cuillère à table de gingembre confit finement tranché • ½ cuillère à thé de cannelle • ½ cuillère à thé de muscade • 1 cuillère à thé de levure • 1 pincée de sel • 2/3 poires
- Préchauffez le four à 180°, tapissez un moule avec du papier parchemin;
- Préparez d’abord la sauce en mettant tous les ingrédients dans une poêle, faites cuire jusqu’à ce que vous obteniez une sauce légèrement foncée (comme une sauce caramel);
- Versez la sauce dans le moule, en prenant soin que la sauce soit bien distribuée;
- Pelez et épépinez les poires, coupez-les en tranches d’environ 5 mm, mettez-les au-dessus de la sauce;
- Préparez le gâteau en mélangeant, avec un batteur électrique, le sucre avec le beurre ramolli et le sirop;
- Ajoutez les œufs, puis la farine et le lait, mélangez bien;
- Ajoutez les épices et le gingembre confit, puis la levure et le sel;
- Cuisez le gâteau environ 40 minutes;
- Renversez et servez-le tiède.
Torta rovesciata alle pere e zenzero candito
Ingredienti:
Per la salsa: 65 gr. burro • 65 gr di zucchero di canna • 1 cucchiaio di sciroppo d’acero • 1 cucchiaio zenzero candito tritato finemente Per la torta: 100 gr. di burro • 120 gr. zucchero (zucchero di canna o normale) • 125 ml. di latte • 170 gr. di farina • 2 uova • 1 cucchiaio di zenzero candito tritato finemente • ½ cucchiaino di cannella • ½ cucchiaino di noce moscata 1 cucchiaino di lievito • 1 pizzico di sale • 2/3 pere
- Preriscaldate il forno a 180 ° rivestire uno stampo con carta forno, tenete da parte;
- Per prima cosa preparate la salsa mettendo tutti gli ingredienti in una teglia, e facendoli cuocere fino ad ottenere una salsa omogenea, simile al caramello;
- Versate la salsa nello stampo, assicuratevi che la salsa sia ben distribuita;
- Sbucciate le pere, tagliatele a fettine di circa 5 mm, poi adagiatele sopra la salsa;
- Preparate la torta mescolando con una frusta elettrica lo zucchero, il burro ammorbidito e lo sciroppo d’acero;
- Aggiungete le uova, poi la farina e il latte, mescolate;
- Aggiungete le spezie, lo zenzero candito, il lievito e il sale e mescolate bene;
- Versate l’impasto nello stampo delicatamente, cuocete la torta per circa 40 minuti;
- Capovolgete e servite.

What a beautiful cake – and so perfect for the season. I adore ginger and crave it year round, but the winter seems to be made for it, especially when paired with warming spices.

Gli odori rassicuranti per me: oltre al sugo di pomodoro fresco, al limone e al basilico, ci sono la cannella e lo zenzero! E’ un piacere maneggiare questi ingredienti, annusarsi poi le dita e capire subito, anche ad occhi chiusi, quando sono stati messi in un impasto… accadrebbe anche nel tuo caso, se mi portassi la torta e la mettessi sotto al naso, ancora prima di assaggiarla… 🙂
Devo ancora pensare alla ricetta per il post di Natale ma qualcosa mi dice che ci sarà lo zenzero… scommettiamo?!
