Two weeks ago it was my husband’s birthday, the second one we celebrated together in Montreal. I love my husband. I love him even more when a “no matter why” party is approaching, either his birthday or Christmas or any other occasion that should be celebrated, he begins by saying “no gifts, no cakes, we will spend an evening just the two of us, this is the way I like”. Liar! I know for a fact that when he says something, he wants exactly the opposite. And so, gifts, a lot of friends over, a cake with candles in the bargain. After this kind of celebration, of course, he always gets happy like a kid in a candy store. And here’s the cake I prepared for him, the original recipe is taken from the Donna Hay’s book “Seasons “. Since this is a real party cake, I’ll take my chance again with Fiesta Friday, that starting from now is going to have 3 judges… Angie, Julianna and Hilda… and so more and more difficult!
Ingredients:
125 gr. softened butter • 140 gr. sugar • 2 eggs • ice zest of one lemon + 3 tablespoons of the juice • 225 gr. all-purpose flour • 80 ml. of milk • 1 ½ teaspoons baking powder • pinch of salt
For garnish: 4/5 tablespoons of yogurt ice cream • 3 egg whites • 170 gr of Icing sugar
- Preheat oven at 160°, grease a mold with butter and set aside;
- Place butter, sugar and lemon zest in a bowl, mix them with a mixer until you obtain a creamy mixture;
- Add eggs, one at a time, than the milk and mix well;
- Mix the flour and baking powder, then add them to the butter and eggs mixture;
- Pour the mixture into the greased mold and cook about 30 minutes;
- Once the cake is ready, wait a few minutes to unmold it over a plate and let it cool for ten minutes, then make a hole in the middle of your cake; ;
- Making sure that it’s not hot, stuff the hole with ice cream and put the cake in the freezer with the tray and leave it there for half an hour;
- Meanwhile prepare the meringue by placing the egg whites in a bowl and beat them using a mixer until they are extremely firm. Then add the icing sugar and continue to whip the egg whites until the mixture is thick and glossy;
- Turn on the oven at 200 °, remove the cake from the freezer and garnish it with the meringue, bake and cook under the grill for 2-3 minutes until the meringue becomes lightly brown. Serve immediately.
- Préchauffez le four à 160°, graissez un moule à tarte et réservez;
- Dans un bol, placez le beurre, le sucre, le zeste de citron, mélangez avec un mixeur jusqu’à obtenir un mélange assez crémeux;
- Ajoutez les œufs, un à la fois,puis le lait et mélangez bien ;
- Mélangez la farine et la levure, puis ajoutez-les au mélange de beurre et œufs;
- Versez le mélange dans le moule et cuisez environ 30 minutes;
- Dès que le gâteau sera prêt, attendez quelques minutes démoulez-le sur un plateau et laissez-le refroidir une dizaine de minutes, puis pratiquez un trou au milieu de votre gâteau et vérifiez que ce n’est pas chaud;
- Farcissez le trou avec la crème glacée et mettez le gâteau au congélateur avec le plateau, laissez au congélateur une demi-heure;
- Puis, ajoutez le sucre, tout en continuant de fouetter les blancs d’œufs, jusqu’à un résultat lisse et d’un blanc éclatant;

Congrats to your husband!!! Such beautiful cake with lots of meringue! 🙂
A lot of meringue!!! thanks a lot for stopping by!
What a nice cake! The meringue looks delicious.
Thank you a lot!
I love when there is a reason to make cake… and this one looks divine… happy birthday to your husband!
Me too…. Its always worth! thank you for your lovely words!
The cake is beautiful and ice cream with my cake, yes please! Happy Birthday to your husband, lucky man getting such a lovely cake.
It has been really fun making this cake because I didn’t
have so many expectations, since I saw it on Donna Hay book… It turned out great match of flavours! Thanks a lot fro your comment!

That is a really beautiful cake, and a cool recipe, too! Funny: I made a lemon tart with meringue this week and was just about to post it, but decided on something else in the last minute – so I´ll show some other time. It´s by far not as impressive as your wonderful meringue hill! Also, there was no such occasion as a birthday, just a lot of lemons in the fridge…. have a nice day!
Thank you Sabine! My meringue was really stiff, but I have to improve the decoration…. it’s a bit asymmetric! I can’t wait what you did with meringue!
I think your cake is splendid, really! not at all to be improved in terms of decoration. And my meringue is nothing to look forward to in comparison, honestly…I´m not a meringue expert , absolutely not!Wishing you a great weekend….
Meringue is tricky… But I’m sure your cake was cute!
Great we to you too!
Looks beautiful and sounds positively delicious! It appears you are the “master of meringue” – it looks perfect!
Lol. I’m not at all !!! but thank youuuuuu
The meringue makes this presentation show-stopping!! 🙂 Beautiful!
Thank you a lot!
Simply stunning!
Thank you Dimple!
Happy, happy birthday to your hubby! I hope he had a wonderful birthday and with this gorgeous cake to celebrate, I am sure he did!! It’s perfect Margherita!
Thank you my dear! My hubby at the end of the party was really really happy… but, trust I’m sure that next year is going to try to convince me again that he doesn’t want celebrate it….
What a stunning looking cake and beautiful photos! I love the “baked Alaska” twist with the ice cream and meringue.
(Sorry to be nitpicking again, but I don’t see when you add the milk in the directions?… )
Lol. So, I’d like to make a deal with you… I want to hire you in order to correct all my drafts…. are you interested??? I’m so glad that you’ve stopped and look at the directions… the milk goes just after the eggs… now the recipe should be correct… hopefully! thanks again!!!
Glad to be of help.
I guess after years of editing recipes I just can’t help it. Though I admit I don’t real ALL recipes as closely, just the ones I really like… 🙂
Thank you again!
Your lucky husband! And isn’t it nice when you are free to make your own decision on what to bake – usually that gives the best result. I’m thinking of making this for myself for my birthday, since no one is likely to make it for me – but looks like such fun. Thanks for bringing this cake to the party.
Thank you Hilda! You’re perfectly right, no pressure, just a couple of cooking books and me! It would be great if you’ll prepare it for your birthday… just one suggestion: USE A LOT OF ICE CREAM! you deserve it!
Thanks. That’s all the encouragement I needed.
Hmm, lucky husband to have this cake! 😀 I am glad you saved some for today’s fiesta. 🙂
Thank you Jhuls! this cake is also for FF crew !
Yay!! Thank you!! 😀 Hope you enjoy the rest of the weekend! 😉
This looks so beautiful! Wow! Wow! Wow! And I absolutely love lemon!
Me too! I have a deep and real passion for lemon… thanks a lot for stopping by!
Absolutely! I am with you….lemon is so delightful!
Oh Margherita! Your husband is so lucky to have a cake like this to celebrate his birthday, and so are we at FF! I adore all of the flavours and textures that you have included in one cake. To me, there is nothing more elegant than meringue, and you have added that too! Merci beaucoup! 😀
I have to confess that I’m not a great fan of meringue,but you’re right, it has the indisputable power of making cakes really elegant! I’m happy you’ve liked it…. and good luck with your FF adventure!
This is a stunning cake!! So beautiful and elegant, I love it, well done! As for parties… great story about your husband being like a child in a candy store, haha. 😀
Thank you Saucy…. you should have seen his face after the party!
Delicious! I am going to try this when my partner is out as I want it all to myself!
Oh that’s great! I love your plan!
Happy Belated Birthday to you husband, Margherita! That is one fabulous cake you’ve brought to the fiesta! Look at all that meringue! YUMMM!
Thank you Patty! for the wishes and for you lovely comment!
A perfect cake for a celebration!
Thank you Laura!
Have a great weekend 🙂
Bon we à toi aussi!
Happy Birthday to your husband! This cake is stunning a show stopper! Love this idea of the sweet meringue on top. Have a super weekend. BAM
Thank you Bam, you are always so kind! Have a great we too!
Love!
❤ thank you!
Belated birthday greetings to your husband. Thanks for sharing a romantic story. I can imagine him jumping like a kid in a Candy store. The cake you made, looks delicious!
Thank you for stopping here and leave this kind message!
Happy belated birthday to your husband! I’m sure your cake made him very happy.
Thanks a lot Francesca… You see, exactly like you I’m in a “lemon mood”!
What a lovely idea filling the hole with ice cream. I really like the look of this cake. So endearing.
Ice cream is always a good excuse, next time I’ll do a bigger hole in order to fit more ice cream! thank you for you comment!
this looks amazing! My bf’s exactly the same… “dont spend money”, “lets be relaxed”, “i dont want any gifts” but his face always lights up when I give him his gift 🙂 Men are all the same right! Steph x
You’re right… I have just one question: why??? I already know that next year is going to be the same! thanks for you comment! have a great sunday!
Beautiful cake, so thoughtful of you to throw your husband a party!
Thank you Cheri!
What a perfect cake! x
Thank youuuuu!
Ahhh, Margherita, what beauty on a plate. That lucky husband of yours! Lemon cake with meringue sound like a perfect combination. The cake looks moist and delicious. A lovely cake for a celebration.
I had a lot of fun making it! I was afraid that the ice cream inside could be too melted but I wasn’t at all! Thank you Ngan for your lovely comment!
Gorgeous, gorgeous photos Margherita… what a lovely cake. What a lucky husband he is to have you love him, and know him as you do. And lucky for you to have a husband who appreciates what you do. I loved this post, it was filled with happiness and love. 🙂
I love the expression “filled with happiness and love”… so cute! You see, we both love celebrate birthdays of people we love. I’ve tried to do my best with cake (I have still to improve…) exactly you did for your mum’ birthday! Thank you fro this kind comment!
I want this cake for my birthday! 😀
❤ I glad you like it!
I’m sure your husband was thrilled with your thoughtfulness.
Yes, he was really happy! thank you for stopping by!
Gorgeous cake, Margy! Love the ice cream filling and meringue as frosting is a great idea. Gotta try this one, so I might steal it for my kids’ birthdays. 🙂
I’m so happy you like it! I choose this cake firstly for the filling, I’m a proudly ice cream addicted! My hubby’s birthday has been the perfect occasion to give this cake a try!
🙂
Exquisite. That is all.
Thank youuuu ❤
Yummy! I love lemon flavor in dessert. This is so awesome :). A very happy birthday to your husband !
Thank you! lemon is one of the best flavour in dessert, I agree. Thanks a lot for stopping by!
Pleasure is all mine 🙂
